Some of the best cakes are those that bridge the gap between dessert and cake – chocolate cakes are often best at this (served warm with a scoop of ice cream) or ginger cake with a drizzle of caramel sauce. Crumble cakes are absolutely excellent with a pool of vanilla custard, and none more so than a rhubarb cake.  (more…)

Pistachio, almond & honey cakes

pistachio cakeI’ve been in a bit of baking rut recently, I think it is okay to admit this. I’ve made a strangely savoury batch of granola bars, and a stranger tray of baked oatmeal that was akin to an oaty omelette. There was a brownie failure which actually turned into some pretty good molten chocolate puddings, but not brownies. I did manage to pull off a tasty rhubarb cake for cake club last month, but it was a stressful experience!

Cupcakes, fairy cakes, buns, muffins or whatever you prefer to call them, are a good way to get your baking mojo back. They are quick to mix and speedy to bake, with less worrying about undercooked middles when you bake a large cake. (more…)

Orange and almond cake

orangeandalmondcakeIn early September I look forward to Autumn, the rusty leaves, the sharp sunshine and the amazing sunsets. By early November I am grumpy. The nights draw in, it rains too much and I find myself eating a bit too much chocolate. This is also the time when I start brightening up my cooking and baking – adding more chilli to curries, extra garlic to sauces and summery flavours to my baking. (more…)

Chocolate banana bread

I try to pretend that banana bread is a valid breakfast food, especially if sprinkled with oats or nuts, but in this case adding chocolate firmly puts banana bread into the cake category. This is one of the best ways of making chocolate cake, you get squidgy-ness from the bananas and a beautiful crisp top, much like a brownie. If we’re calling it bread you could even slice it up and serve it with nutella. Just a suggestion.
